Egg curry is an Indian dish made with boiled or fried eggs cooked in an aromatic and flavorful curry sauce. It can be cooked in many ways, the way of cooking differ from kitchen to kitchen. Egg curry is made with egg, onion, ginger, garlic, tomato, garam masala and other spices. It can be served with rice, naan or roti.

How to cook an egg curry

Today I am going to share with you how I make egg curry. First, you need to hard boil some eggs. Make some small cuts in the boiled eggs, but do not penetrate the outer white parts. Heat some oil in a frying pan and fry the eggs until their outer layer turns golden brown. Remove them from the pan and set aside. Heat some more oil in a cooking pan, either the same one you used for frying or a new one. Roast some whole spices such as cumin seeds, cinnamon, bay leaf, and black cardamom. You can also use meat masala instead of the whole spices, but using the whole spices will give a delicious smell. Make a paste of onion, ginger, garlic, and green chili in a blender. Roast the whole spices until the cumin seeds crackle. Add the paste and fry it until it turns golden brown. Then add the cumin, coriander, red chili, and turmeric powder, and sauté for a minute. Add tomato paste, followed by salt. Roast the ingredients with the tomato paste and then add water to obtain the desired thickness for the curry. Put the fried eggs in the gravy and add garam masala. Cover the cooking pan and cook for 5-10 minutes. Uncover the pan and garnish with fresh coriander leaves before serving. Serve it with rice or roti.

Steps for cooking an egg curry

Step 1:- Fry the eggs until the outer layer becomes brown and crispy.

Step 2:- Roast whole spices.

Step 3:- Make a paste of onion, ginger, garlic and green chili.

Step 4:- After crackling of cumin seeds add paste.

Step 5:- Fry in a low medium flame until golden brown.

Step 6:-Add cumin, coriander, turmeric and red chili powder and fry for a minute.

Step 7:- Add tomato paste and fry it well.

Step 8:- Cook the paste until it releases oil.

Step 8:- Add water according to desire thickness of gravy.

Step 9:- Deep fried egg and season with salt and garam masala.

Step 10:- Cover the pan and cook it for 4-5 minutes in a medium flame.

Your egg curry is ready garnish with finely chopped coriander before serving.

Egg curry is well loved Indian dish consisting of hard boiled eggs cooked in a flavorful and spicy gravy. The gravy is made by cooking onion, ginger, garlic, green chili, tomato and variety of spices such as coriander, cumin, turmeric, red chili powder and garam masala in a oil. Ingredients
  

  • 4 pieces hard boiled eggs
  • 2 tbsp cooking oil
  • 2 medium sized onion
  • 2 medium sized tomato
  • 1 tsp garlic paste
  • 1 tsp ginger paste
  • 2 pieces green chili
  • 2-3 pieces bay leaf
  • 4-5 pieces curry leaves
  • ½ tsp cumin seeds
  • 3-4 pieces cloves
  • 2 pieces black cardamom
  • 3-4 inch cinnamon
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp garam masala
  • For garnishing finely chopped coriander leaves

Instructions
 

  • First of all heat an oil in a frying pan and fry eggs until the outer parts of an eggs becomes golden brown. After frying take out eggs in a plate and keep aside.
  • Heat an oil in a cooking pan. Roast whole spices such as cumin seeds, bay leaf, curry leaves, cloves, black cardamom and cinnamon until cumin seeds crackles and whole spices gets aromatic.
  • Make a paste of onion, tomato, ginger, garlic and red chili in a mixture and fry them until brown color.
  • After frying all ingredients well add spices such as cumin, coriander, turmeric and red chili powder and cook for 1 minute. Then after add 3 cup of water or you can adjust quantity of water according to the desire thickness of gravy.
  • After adding water add the fried egg and garam masala, cover the pan and cook it for 5-10 minutes in a high medium flame.
  • Your egg curry is ready uncover the pan and garnish with fresh coriander leaves before serving.
