Choila is very popular dish in Nepal. It is famous in kathmandu city of Nepal due to presence of Newari community. Choila can be made made from duck, buffalo, mutton and chicken meat. Delicious Choila is possible only when meat is grilled in open fire. Choila is the combination of grilled meat with mustard oil,raw ginger – garlic,fresh lemon juice,spring onion and grilled tomato paste.

Ingredients require to cook duck Choila

Lets start with listing the ingredients for making duck choila

 

  1. Duck meat – 500 grams
  2. Tomato – 3 medium sized
  3. Mustard oil – 2 tablespoon
  4. Ginger garlic paste – 2 teaspoon
  5. Cumin powder – 1 teaspoon
  6. Black pepper powder – 1/2 teaspoon
  7. Red chili – as per taste
  8. Fenugreek seeds – 1/2 teaspoon
  9. Turmeric powder – 1/2 teaspoon
  10. Red chili powder – as per taste
  11. Lemon juice – 1 teaspoon
  12. Finely chopped onion(Spring onion for better taste) – 1 medium size
  13. Finely chopped coriander leaves – for garnishing
  14. Salt –  as per taste

Steps for cooking Choila

Grilling Duck meat in an open fire.

Step 1:- Cut Duck meat into large pieces and grill them in an open fire. Along this Duck meat you can grill tomatoes or boil tomatoes.

Small pieces of grilled meat.

Step 2:- Cut the grilled meat into small pieces if they are not well cooked well then again grill the small pieces for few minutes or you may fry the small pieces in oil.

Grinding ginger-garlic with roasted tomatoes

Step 3:- First of all roast tomatoes or you can boil it and peel them. Grind tomatoes mixing ginger, garlic, timur and chili in a natural grinder or in a grinding machine.

Transfering all ingredients in a mixing bowl.

Step 4 :- Pour the tomato chutney in a bowl containing meat pieces along with other ingredients like finely chopped onion, spring onion, coriander leaves, salt, green chili and red chili.

Roasting fenugreek seeds.

Step 5 :- Heat oil in a small pan and roast fenugreek seeds until brown black. Turn of the heat and add turmeric powder then immediately pour in a mixing bowl. Remember that add turmeric powder only after turning off the flame.

Duck choila ready for serving.

Step 6:- Squeeze lemon juice and mix them well.  After mixing all ingredients well rest the Choila for 10-15 minutes so that it will absorbs all flavor. Your Choila is ready,  enjoy with your family and frinds.

How to cook Duck choila
