What is Kabro(Futkal) pickle?

Kabro is Nepali name for fresh shoots of  Ficus lacor a large evergreen tree which are used in making pickles. Kabro is known as Futkal among Indians. Kabro pickle is very popular among Nepalese and Indians, and is prepared by boiling it and mixing few ingredients in it. It can be prepared in few interval of times. So lets try once to make Kabro pickle.

How to prepare Kabro(Futkal) pickle?

First of all clean and wash the Kabro, and boil until it becomes tender, it does not takes more time. You can prepare by adding potatoes, so at the same time boil potatoes in another vessel. If you want to prepare without adding potatoes then it is also OK. Now you need to roast white sesame seeds, roast it and make powder in mixture or with natural grinder (Silauto). After boiling Kabro drain it and peeled and smash the boiled potatoes. All ingredients are ready now its turn for mixing them.

Now transfer the Kabro and boiled Potatoes in a mixing bowl. Add the prepared sesame powder, red chili powder, salt and for sourness Chuk(alternatively you can use lemon juice). Heat oil in a small pan and roast fenugreek seeds until brown black. Turn off the heat and add 1/2 teaspoon of turmeric powder, pour the roasted fenugreek seeds with turmeric powder. After this mix kabro and potatoes with all ingredients and your Kabro pickle is ready to serve.

Steps to prepare Kabro(Futkal) pickle.

Step 1:- Clean the Kabro and rinse it well for a boil.

Step 2:- Boil Kabro for 10 minutes in a medium flame.

Step 3:- Boil potato in another vessel.

Step 4:- Drain Kabro and transfer it to big mixing bowl.

Step 5:- Peel and smash potato with your fingers.

Step 6:- Roast sesame seeds until crackles.

Step 7:- Grind roasted sesame seeds, it is best to grind in a natural grinder.

Step 8:- Add sesame powder, chuk (for sourness alternatively you can use lemon juice), red chili powder and salt.

Step 9:- Heat an oil in a small pan and roast fenugreek seeds until brown black(tempering), turn off the heat and add pinch of turmeric powder.

Step 10:- Tempering with fenugreek seeds helps in improving digestion.

After mixing all ingredients Kabro pickle is ready.

Equipment

Ingredients
  

  • 300 grams Kabro
  • 200 grams Potatoes
  • 1 tbsp cooking oil
  • ½ tsp fenugreek seeds
  • ½ tsp turmeric powder
  • 1 tbsp chuk or you can use lemon juice
  • As per taste salt
  • As per taste red chili powder

Instructions
 

  • First of all clean potatoes and boil in a pressure cooker. At the same time clean and wash Kabro in running water and give a boil until it becomes soft enough for edible.
  • Peeled the potatoes and smash it into marble sized pieces.
  • Transfer smashed potatoes and Kabro in a mixing bowl.
  • Now its time to roast white sesame seeds. Make a powder of roasted sesame seeds with natural grinder or with mixture and transfer it to mixing bowl.
  • Add salt, red and for sourness add chuk , if you do not have chuk you can use lemon juice.
  • Heat oil in small pan and roast fenugreek seeds until black brown and turn off heat and add turmeric powder and pour it in a mixing bowl and mix potato and kabro with all ingredients.Your Kabro pickle is ready to serve.
