What is Chukauni?

Chukauni is traditional Nepalese dish originated from Palpa district of Nepal. Chukauni is made with boiled and smashed potatoes, yogurt, onion, coriander leaves, turmeric powder, mustard oil,  fenugreek seeds and chili powder. It can be enjoyed as side dish with naan, rice and as a snack too. It can be enjoyed in winter as well as summer. This recipe is very easy and simple to prepare with few ingredients. Lets try once to make Nepalese traditional side dish Chukauni.

How to prepare Chukauni?

Chukauni is one of the popular dish from Palpa district of Nepal. This recipe is very easy to prepare with few ingredients. Remember that all ingredients mentioned are compulsory and no any additional ingredients are required. First of all select the equal size of potatoes and wash them in flowing water. In a medium pot boil all the potatoes. Once the potatoes are cooked drain and rinse them under cold water. When potatoes becomes cold enough to handle then peel it and cut into small pieces. It is best to smash them with fingers. Also you need to julienne an onion. Now search for mixing bowl and transfer yogurt(must choose sour yogurt), potatoes, onion and finely chopped green chili. Heat mustard oil (whatever oil you have) in a  small pan and roast fenugreek seeds until brown black, turn off heat and add turmeric powder ( note – before adding turmeric powder you must have to turn off heat). Transfer it to mixing bowl and mix them well. Add salt and red chili powder according to your taste. After mixing them garnish with fresh coriander leaves and here your Palpali Chukauni is ready.

Note – Instead of adding lemon juice choose sour yogurt.

Steps to prepare Chukauni

Step 1:- First of all you need boiled potato and yogurt.

Step 2:- Cut the onion, green chili and fresh coriander leaves.

Step 3:- Transfer yogurt, smashed potato, julienne onion and finely chopped green chili.

Step 4:- Heat an oil in a pan and roast fenugreek seeds until dark brown. Turn off the heat and add turmeric powder.

Step 5:- Add a tempering of fenugreek seeds and turmeric powder to the mixing bowl and mix them well.

Chukani is ready garnish with fresh coriander leaves before serving.

Chukauni

Chukauni is a potato and yogurt salad tempered with fenugreek seeds and turmeric powder. Generally it is made from potato, onion, yogurt, coriander and spices. It is a popular type of salad popular among Nepalese. It can be eaten as a side dish, you can enjoy chukauni with rice, naan, sel roti or with pakoda.

Equipment

  • 1 pressure cooker
  • 1 Mixing bowl

Ingredients
  

  • ½ litr Yogurt (sour)
  • 250 grams potatoes
  • 2 medium sized onion
  • 3 pieces green chili
  • 1 tbsp mustard oil or any oil you have
  • 1 tsp turmeric powder
  • Half tsp fenugreek seeds
  • Optional lemon juice use lemon juice is your yogurt is less sour otherwise no need.
  • For garnishing finely chopped green coriander leaves
  • As per taste red chili powder
  • As per taste salt

Instructions
 

  • First of all rinse the potatoes 3-4 times with clean water. In a medium pot boil all the potatoes. It may takes 10 minutes while cooking potatoes, if you take more water then it takes more time so use exact amount of water.
  • Once the potatoes are well cooked turn off the heat. Drain the potatoes and rinse them under cool water. Once cooled enough to handle peel it and cut into small cubes.
  • Transfer the small cubes of potatoes in a mixing bowl along with yogurt,finely chopped onion, green chilies, salt, chili powder and lemon juice as per need.
  • After transferring in a mixing bowl mix it well. If you are cooking first time you can taste and add salt,chili powder and lemon as per need.
  • Heat a mustard oil in a small pan. Add fenugreek seeds in a hot oil and roast fenugreek seeds until it becomes dark. When fenugreek seeds becomes dark turn off the heat and a pinch of turmeric powder.
  • Now pour the hot oil with fenugreek seeds and turmeric powder to the mixing bowl. Mix everything together adjust seasoning and garnish with chopped fresh coriander leaves.
  • Your Chukauni is ready to serve enjoy with your family and friends.
