Aloo matar

Aloo matar is a classic south Asian side dish composed of potato, green peas, spices and tomatoes in a flavorful tomato sauce. Ingredients
  

  • 200 grams potatoes
  • 150 grams peas
  • 1 tbsp Cooking oil
  • 2 medium sized onion
  • 2 medium sized tomato
  • 2 pieces of green chili
  • 1 tbsp ginger garlic paste
  • .5 tsp cumin seeds
  • .5 tsp cumin powder
  • 1 tsp coriander powder
  • .5 tsp turmeric powder
  • 1 tsp garam masala
  • As per taste red chili powder
  • As per taste salt
  • For garnishing chopped fresh coriander leaves

Instructions
 

  • Once the cumin seeds begins to splutters add chopped onions and cook until golden brown.
  • Add diced potatoes and stir fry for about 5 minutes until lightly brown
  • Add ginger garlic paste and cook for a few minutes.
  • Add green peas and spices like turmeric powder, cumin powder, coriander powder, red chili powder, garam masala and cook for 2 minutes.
  • Add tomato puree and salt. Cook until water from tomato evaporated.
  • Add 2 cup of water and cover the pan. Simmer for 7-8 minutes until the potatoes are tender.
  • Uncover the pan and toss the chopped fresh coriander leaves and serve with rice or naan.
